  • 3/4 cup buttermilk
  • 1/4 cup fresh lemon juice
  • 1 to 1 1/4 cups fresh blueberries
  • 2 tablespoons melted butter
  • Coarse or turbinado sugar for sprinkling
  • 1 1/4 cups powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  1. Preheat your oven to 400 degrees F. Line a half sheet pan with parchment paper and set it aside.
  2. In a large bowl, combine the all-purpose flour, granulated sugar, fresh lemon zest, baking powder, baking soda, and salt. Mix well until evenly combined.
  3. Using the large holes of a box grater, grate the cold butter into the dry ingredients. Toss until the butter shreds are coated with the flour mixture.
  4. Gently add the fresh blueberries into the bowl and toss to combine without mashing them.
  5. Stir in the buttermilk and fresh lemon juice using a silicone spatula. Fold gently until the dough starts coming together. It's okay if some dry spots remain.
  6. Turn out the dough onto a floured counter. Use your hands to bring it together into a cohesive mass without crushing too many blueberries.
  7. Pat and press the dough into a long rectangle about 15X3 inches thick.
  8. Use a bench scraper or knife to cut the dough into triangular wedges. Place them on the prepared baking sheet about half an inch apart.
  9. Brush tops with melted butter and sprinkle with coarse sugar. Bake for about 15 minutes until lightly golden on bottoms and sides.
  10. Let scones cool on the pan briefly before transferring them to a wire rack to cool completely.
  11. For the glaze, whisk together powdered sugar and fresh lemon juice until thick but pourable. Drizzle over cooled scones.
