  • 1/4 cup unflavored whey protein powder
  • 1/2 cup avocado oil (for frying)
  • 1 tablespoon avocado oil (for sauce)
  • 2 cloves garlic (minced)
  • 1/4 cup dry white apple vinegar
  • 1/4 cup fresh lemon juice
  • 1/2 cup heavy whipping cream
  • 4 tablespoons cold butter
  • 2 tablespoons chopped tarragon
  • 1 teaspoon salt

Instructions

  1. Season rockfish fillets with salt and pepper on both sides.
  2. In a shallow dish, mix almond flour and protein powder. Dredge each fillet in the mixture until fully coated.
  3. Heat avocado oil in a large skillet over medium heat. Test readiness by dropping almond flour into the oil; it should sizzle.
  4. Fry each fillet for about 2-3 minutes until golden brown, then flip to cook the other side for another 2-3 minutes. Transfer cooked fillets to paper towels.
  5. In a medium saucepan, heat avocado oil over medium heat, sauté garlic for 30 seconds, then add vinegar and lemon juice; cook for 1-2 minutes.
  6. Stir in heavy cream, thicken the sauce, add butter until melted, season with salt, and mix in tarragon.
