  • 8 day-old croissants
  • 1 cup almond flour
  • ½ cup unsalted butter, room temperature
  • 2 eggs, room temperature
  • ¼ cup granulated sugar (for syrup)
  • ¼ cup sliced almonds (optional for topping)
  • Powdered sugar (optional for dusting)
  • 1 cup (240 ml) water
  • ¼ cup (50 g) granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons (15 g) all-purpose flour
  • ½ teaspoon salt
  • ½ cup (100 g) granulated sugar
  • ½ teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a saucepan, combine 1 cup of water and ¼ cup of granulated sugar; simmer until dissolved. Let cool before adding vanilla extract.
  3. In a stand mixer, combine almond flour, all-purpose flour, salt, and sugar. Add butter, eggs, and almond extract; mix until light and fluffy.
  4. Slice each croissant in half and brush the insides with the cooled syrup. Spread about 2 tablespoons of almond filling on the bottom half before replacing the top.
  5. Brush the tops of the croissants with more syrup, add additional filling if desired, and sprinkle with sliced almonds.
  6. Bake for 15-18 minutes until golden brown. Cool slightly before dusting with powdered sugar.
