  • 1/2 cup apple juice
  • 1/3 cup butter
  • 1/2 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup heavy whipping cream divided (1/2 cup at the beginning and 1/2 later)
  • 11/2 teaspoons cinnamon
  • Food coloring

Instructions

  1. Wash and dry the apples thoroughly, then poke holes all over them with skewers.
  2. Soak the apples in a mixture of apple juice for 3.5 hours.
  3. Remove and dry the apples before inserting sticks and placing them on parchment paper.
  4. In a saucepan, melt butter, salt, corn syrup, sugar, 1/2 cup cream, and cinnamon over low heat until combined.
  5. Gradually increase heat to simmer until the caramel reaches 236°F; then add remaining cream and let it reach 245°F.
  6. Coat each apple in caramel while it's still warm, then allow to cool completely.
