  • 1/3 cup low sodium soy sauce
  • 1/3 cup pineapple juice
  • 2 tablespoons brown sugar
  • 2 tablespoons ketchup
  • 4 cloves garlic, chopped
  • 1 tablespoon grated ginger
  • 2 cups fresh pineapple chunks
  • 1 can (14 ounces) coconut milk
  • 1 cup basmati rice
  • 1/2 small shallot, finely chopped
  • 1 jalapeno, seeded if desired and chopped
  • Juice of 1 lime
  • 2 tablespoons fresh thyme leaves
  • 1 avocado, diced
  • 1/2 cup water
  • 1 pinch salt
  • 2 tablespoons sesame oil or extra virgin olive oil
  • 1/4 cup chopped cilantro

Instructions

  1. Rinse the basmati rice under cold water until clear.
  2. In a rice cooker or pot, combine rice, coconut milk, water, and a pinch of salt. Cook until tender.
  3. In a large skillet over medium heat, heat sesame oil. Sauté chopped shallots, garlic, ginger, and red pepper flakes for about 3 minutes.
  4. Add chicken pieces to the skillet; cook until browned on all sides (5–7 minutes).
  5. Stir in soy sauce, pineapple juice, brown sugar, ketchup, and fresh pineapple chunks. Simmer for another 5 minutes until the sauce thickens slightly.
  6. Fluff the coconut rice and serve the chicken over it, garnished with diced avocado and cilantro.
