  • 1 Tbsp Olive Oil
  • 1 Celery Stalk, Finely Chopped
  • 1 Small Carrot, Peeled & Finely Chopped
  • 1 Medium Onion, Finely Chopped
  • 2 Garlic Cloves, Crushed
  • 400 G Chickpeas, Rinsed And Drained
  • 400 G Chopped Tomatoes
  • ½ Tsp Ground Cumin
  • ½ Tsp Ground Cinnamon
  • ½ Tsp Ground Paprika
  • ½ Tsp Cayenne Pepper
  • 850 Ml Vegetable Stock

Instructions

  1. Prepare all ingredients by finely chopping the celery, carrot, onion, and crushing the garlic.
  2. Heat olive oil in a soup maker or saucepan. Sauté chopped onion, garlic, celery, and carrot for about 5 minutes until softened.
  3. If using a saucepan, transfer the sautéed mixture to your soup maker. Add chickpeas, chopped tomatoes, spices, and vegetable stock.
  4. Blend the soup to your desired consistency. Secure the lid of your soup maker and select the chunky setting. Cook until ready.
  5. Serve hot in bowls; optionally garnish with fresh mint leaves.
